Chicken Pad Thai (Made 4 servings and 11/2 cup is a serving which is 2SP!!

Here’s what you need:
1 cup shredded chicken breast
4 zucchini
3 carrots

Peanut Sauce:
1 tbsp minced garlic
4 tbsp low sodium soy sauce
1 tsp seasme oil
1 tbsp sugar free maple syrup
1 tsp minced ginger
1/2 tbsp sriracha
juice of 1 lime
pepper flakes (as much as you want)
3 tbsp pb2 powder mixed with water

Toppings:
salted peanuts crushed up
cilantro
green onions
sesame seeds

Heat up noodles in pan with 1/2 tsp seasme oil, add chicken, mix well, then serve with toppings. Make sure it’s heated up but not cooked you want noodles firm.
