No Cream of Mushroom Soup – From "The Millennium Cookbook"

Cashew Sour Cream:
1 Cup raw cashews
2 teaspoons light miso
1/4 cup fresh lemon juice
1/4 tsp ground nutmeg
1 cup water
Sea Salt to taste

Directions: Combine cashews, miso, lemon juice, nutmeg, and 1/2 of a cup of water. Blend until thick and then add a little more water until it has the consistency of whipped cream, ours took the entire 1 c of water. Add sea salt to taste, put it in a dish, cover, and put it into the fridge for 30 minutes.

Mushroom Soup Ingredients:
4 Red onions cut leghtwise into 1/2 in thick crescents
2 tsps minced garlic
1 c dry red wine
2 tsp sugar
2 lbs white mushrooms (cremini) add in some fresh shiitake mushrooms
1 ounce dried porcini mushrooms soaked in some warm stock
1/2 tsp dried sage
1 tsp dried thyme
1 tsp dried tarragon
1/3 tsp ground nutmeg
8 c veggie stock
2 tbps soy sauce
1 tbps balsamic vinegar
8 oz silken tofu
Sea salt and pepper to taste

In a soup pot combine the onions, garlic, wine, and sugar. Cook over medium-high heat stirring often until the onions are reddish brown. Should take about 15 minutes or so. Add mushrooms including the porcini and its soaking liquid (about 3/4c stock). Make sure to strain the porcini to get the sand/grit out!!

Stir and cook for 10 minutes then add the herbs, nutmeg, and stock. Simmer the soup for 40 minutes. The mushrooms will be very soft. Add the soy sauce (tamari for gluten free), and balsamic vinegar.

Add silken tofu and soup mixture into a blender (You will most likely have to do this in batches, our vitamix wasn’t big enough for all of this in one go). Blend it until it is smooth then serve with some nice warm homemade sourdough!
