Recipe: Vegetarian Kidney Bean Corn Chili

Cooking time: 30 minutes.

Pull this vegetarian chili together in 45 minutes for a hearty and spicy meal without the meat. Kidney beans make up the bulk of this chili, while peppers, corn, onion, and spices combine with tomato paste for a savory and filling meal.

Ingredients:
3 cups cooked red kidney beans
1 small onion, chopped
1 clove garlic, minced
2 tbsp vegetable oil
½ cup green pepper, chopped
2 cups corn
1 cup water
1 ½ tbsp tomato paste
1 ½ tbsp chili powder
¼ tsp ground cumin
1 tsp dried oregano
Salt and pepper to taste
Cheddar cheese (optional)
Avocado (optional)
Brown rice (optional)

Method:
1. Mash 1 cup of the beans.
2. Cook onion and garlic in oil over medium low heat until soft.
3. Add green pepper and brown lightly.
4. Add corn, water, and tomato paste.
5. Add all the beans.
6. Add seasonings.
7. Bring to a boil.
8. Simmer for 30 minutes until thickened.
9. Optional: serve with rice, cheddar cheese, and avocado.
